The green-lipped mussel is native to the coastal waters of New Zealand where it is cultivated. Mussels in New Zealand's pristine waterways feed on a special variety of antioxidant-rich subarctic plankton, designed to protect against high levels of ultraviolet radiation. Ozone holes over New Zealand have forced plankton aquaculture to evolve to protect itself with powerful anti-inflammatory compounds.
